Well Dressed Salmon with a bread crumb topping (Well dressed salmon recipe adapted from Rachel Ray)

You Will Need:

For Well-Dressed dressing
– 1 cup of cherry tomatoes, cut into small chunks

– 1/2 an onion, finely chopped

– 1 cucumber (not peeled, with seeds) cut into small chunks

– 2 tablespoons honey mustard

– 3 tablespoons sugar

– 1/4 cup white wine vinegar

– 8 tablespoons dried dill (I know, it’s a lot, but the more dill the better! You can use about 10 tablespoons of fresh dill)

For the crumb topping:

– olive oil

– Italian-seasoned bread crumbs

– 2 tablespoons dried basil

– 2 tablespoons dried dill

–  1/2 teaspoon garlic powder

For the salmon:

– 1 large, salmon filet

– 2 tablespoons minced garlic

– 2 tablespoons lemon juice

– 3 tablespoons teriyaki sauce

– 3 1/2 tablespoons season-all salt

– 1/2 teaspoon garlic powder

– 1/2 teaspoon onion powder

– 1 teaspoon black pepper


1. Season salmon with all of the ingredients listed. Marinade for at least 1 hour (or you can just throw it in the oven right after you season it)

2. Preheat oven to 350 degrees.

3. Mix all of the ingredients needed for the well-dressed salmon. Cover, and refrigerate.

4. To make the crumb topping: Mix dried herbs and bread crumbs. Add olive oil until mixture looks crumbly. Pour mixture on top of salmon. Bake for about 35 minutes, or until salmon looks done.

5. When salmon is done, drizzle with well-dressed salmon dressing. Bon appetit!
