Mini Cheesecakes

These cheesecakes are beyond amazing and your guest are sure to be asking for more. These cheesecakes don’t only taste good, they look wonderful! I took this recipe from All Recipes and you guessed it, tweaked it!

You Will Need:

For crust:

– About 1 cup of graham cracker crumbs (If you don’t have graham cracker crumbs you can always throw graham crackers in the blender and make your own crumbs)

– 4 tablespoons of butter

– 1/4 cup sugar


– 2 8 oz packages of cream cheese (room temperature, if they aren’t at room temperature, throw the cream cheese in the microwave until soft)

– 3/4 cup of granulated sugar

– 1 tsp vanilla extract

– 2 eggs


1. Preheat the oven to 350 degrees.

2. To make the crust, mix together graham cracker crumbs and butter until crumbly. Set aside.

3.  To make the filling put cream cheese, vanilla, sugar, and eggs in a blender until smooth. Poor into a large bowl.

4. Put about 3 tablespoons of crust on muffin cup, and then use an ice cream scooper to scoop out cream cheese mixer.

5. Bake for about 30 minutes, or until the cheesecake filling is set.
